This mocktail uses the apple cider vinegar from the back of the cabinet. From Bon Appetit
1 pint frozen berries (raspberries, blueberries, blackberries or a combination)
1 ½ cups unfiltered apple cider vineyard
¼ cup sugar
Prepare the concentrate: Bring the first three ingredients to a boil in a medium saucepan. Steep for 30 minutes, then strain through a fine-mesh sieve. Press on the berry bits to get all the liquid. Cover; chill until cold. For one serving, fill a highball glass with ice and add 2 tablespoons of the concentrate. Top with club soda.
