We love how sophisticated the grilled cheese sandwich has been getting lately. This version uses deliciously sharp feta and sneaks in vegetables for little tummies. Though the original calls for roasted red pepper relish, we imagine any salsa or tomato-based sauce you have on hand could make a decent substitution. Use this as a chance to dust off the panini press you never get to use, or make the sandwich on a plain ol’ griddle. From Grilled Cheese Social.
1/3 cup of crumbled feta
2 tbsp of roasted red pepper relish
1/4 cup of fresh baby spinach
2 slices of seven grain bread
2 pats of salted butter
1 pinch of dried parsley
Sprinkle feta on one slice of bread. Spread relish on feta and add spinach leaves. Top spinach cheese with remaining feta. Put griddle on medium-high and melt butter and dried parsley. Press sandwich on griddle until feta begins to become creamy.
